South African Spicy Mango Glazed Chicken

Ingredients:
1 tbsp sunflower oil
1 small red onion, finely diced
2 cloves of garlic, minced
1 green chili, deseeded and finely chopped
6 tbsp mango puree
1 tbsp soy sauce
6 tbsp Greek yogurt
8 chicken drumsticks, skin on Mixed salad leaves, to serve
Instructions:
Step 1:
Preheat the oven to 200C/180C fan/gas 6. In a frying pan, heat the sunflower oil over medium heat. Add the diced red onion, minced garlic, and chopped green chili. Sauté for a few minutes until the onion is softened. Stir in the mango puree and soy sauce. Remove from heat and let it cool slightly. Then, stir in the Greek yogurt and season to taste.
Step 2:
Place the chicken drumsticks on a foil-lined baking tray and brush them generously with the spicy mango glaze mixture. Ensure they are evenly coated. Reserve some of the glaze for serving. Roast the chicken in the preheated oven for 40-45 minutes until cooked through and the glaze is sticky and caramelized.
Step 3:
Once cooked, remove the chicken drumsticks from the oven and let them rest for a few minutes. Serve the spicy mango glazed chicken on a bed of mixed salad leaves. Drizzle with the reserved glaze for extra flavor. Enjoy this tantalizing South African dish!
